Margarine is a good example of a food where the obvious question has mostly gone away and two less obvious ones have replaced it.
The fat, which used to be the whole question
Margarine was invented in the nineteenth century as a cheap butter substitute, and it was made from beef tallow. That history is why the question still gets asked, and it is why the answer used to be straightforward in the other direction.
Modern production is dominated by vegetable oils: palm, rapeseed, sunflower, soybean, and coconut. Most retail margarine and vegetable spread names those oils on the label, which settles the question immediately.
The exceptions are worth knowing. Some blended spreads, some baking and pastry margarines, and some regional or traditional products still include animal fat. Where a label says only fats, oils, or vegetable and animal fats without naming them, that is a prompt to ask.
Vitamins A and D are fat-soluble and unstable, so they are added as protected dry beadlets. Gelatin is one of the standard wall materials for those beadlets, alongside modified starch and gum acacia.
The emulsifier
Margarine is an emulsion, water dispersed through fat, and it will separate without help. E471, mono- and diglycerides of fatty acids, is the usual stabilizer, sometimes alongside soy or sunflower lecithin.
E471 is the most common source-dependent additive in the aisle. The fatty acids it is built from may come from palm, soy, or other vegetable oils, or from animal fat, and the code is identical either way. The added vitamins
Fortification of margarine with vitamins A and D is required or customary in many countries, precisely because margarine replaced butter in the diet and butter carried those vitamins naturally.
Adding a fat-soluble vitamin to a product with a long shelf life is not simple. The vitamin degrades on contact with air, light, and heat, so it is supplied as a dry premix in which tiny droplets are surrounded by a protective wall. Gelatin is one of the common wall materials. This is the same mechanism described in the vitamin D3 guide, and it is the reason a spread listing only vegetable oils can still involve gelatin somewhere upstream.
Vitamin D3 itself is usually derived from lanolin, the grease recovered from shorn sheep wool, which many certifiers accept because no slaughter is involved. Lichen-derived D3 and UV-treated yeast D2 avoid the question entirely.
The rest of the tub

- Colors: usually beta carotene or annatto, both plant derived.

A quick spread label check
- Confirm the fats are named and are vegetable oils.
- Treat an unnamed fats or oils declaration as a prompt to ask.
- Check the emulsifier and apply the E471 source question.
- Note added vitamins A and D and ask what carries them.
- Check any dairy component for the rennet question.
- Read for added alcohol in preservatives or flavorings.
- Prefer a certified product where several of these appear together.
