Lipase, the check most people skip
Rennet gets nearly all the attention, but it is not the only enzyme added to cheese. Lipase is used to develop sharp, piquant flavor in a group of mostly Italian-style cheeses, and traditional lipase preparations are made from the salivary glands and forestomach tissue of young calves, lambs, and kids.
Cheeses where added lipase is common include provolone, pecorino romano, some feta styles, romano, and various sharp Italian hard cheeses.
