Preservatives take a disproportionate share of the worry on ingredient lists. As a category they deserve less of it than almost anything else, which makes knowing the two exceptions genuinely useful.
The ones that need no work
These cover the overwhelming majority of preserved products on a supermarket shelf. All are synthetic or mineral, and none involve animal material.
- Sorbates (E200 to E203): sorbic acid and its potassium, sodium, and calcium salts. Manufactured synthetically. Very widely used.
- Benzoates (E210 to E219): benzoic acid, sodium benzoate, and related. Synthetic. Common in soft drinks and sauces.
- Sulphites (E220 to E228): sulphur dioxide and sulphite salts. Mineral. Used in dried fruit, wine, and juices, and a declared allergen in many markets.
- Nitrites and nitrates (E249 to E252): curing salts for meat. Mineral.
- Propionates (E280 to E283): propionic acid and its salts. Used against mould in bread.
- Carbon dioxide (E290): used to displace oxygen in packaging.
The organic acids used alongside them are covered elsewhere: citric acid and lactic acid are both fermentation products with narrow questions of their own.
Sodium nitrite is a mineral salt. The question on bacon, ham, or salami is the animal and its slaughter, not the curing salt.
Lysozyme, the one people miss
Lysozyme is an enzyme with antibacterial activity, and the commercial source is hen egg white. It appears under E1105.
Its main use is in hard cheese. Certain cheeses can develop late blowing, a defect where gas-producing bacteria create unwanted holes and off-flavours weeks into ripening, and lysozyme suppresses it. Several Dutch and Italian styles use it. It is also used in winemaking to control malolactic fermentation.
Egg from a permitted bird is halal, so lysozyme is usually not a problem in itself. It matters because it is genuinely animal derived in a category where nothing else is, and because it appears on cheese labels where people are already checking the coagulant. Natamycin, the fermentation one
Natamycin, E235, is produced by fermenting Streptomyces natalensis. It works against moulds and yeasts rather than bacteria, so it is used as a surface treatment on cheese rinds and on cured sausage casings.
Because it is a fermentation product it is not animal derived, but it inherits the question that applies to everything grown in a tank: what the organism was fed. Natural antioxidants and preservative-free claims
Products avoiding numbered preservatives often use rosemary extract, tocopherols, or an acidified vinegar preparation instead. These are not automatically simpler.
Rosemary extract is usually produced by solvent or oil extraction, so the carrier is a fair question in the same way as for colours, discussed in the propylene glycol guide. Tocopherols, the vitamin E family, are normally derived from vegetable oils. Vinegar preparations bring the question set out in the vinegar guide, since the type of vinegar is not always named.
A quick check
- Treat sorbates, benzoates, sulphites, nitrites, and propionates as settled.
- On cheese, look for lysozyme or E1105 alongside the coagulant.
- Treat natamycin as a fermentation product with a medium question.
- On cured meat, focus entirely on the meat rather than the curing salt.
- On preservative-free products, check the natural antioxidant and its carrier.
- Spend the attention saved here on gelatin, colours, enzymes, and flavours.

Frequently asked questions
Are preservatives halal?
Nearly all of the common ones are. The main preservative codes cover synthetic or mineral compounds with no animal input: sorbates, benzoates, sulphites, nitrites, and propionates. Two are worth a closer look. Lysozyme, E1105, is extracted from egg white and appears in some cheeses and wines. Natamycin, E235, is a fermentation product, so it carries the usual culture-medium question rather than an animal one.
Is sodium benzoate halal?
Sodium benzoate, E211, is produced synthetically by neutralising benzoic acid, and benzoic acid is manufactured industrially rather than extracted from animals. There is no animal input in the standard route, so it is widely accepted. It is one of the most common preservatives in soft drinks, sauces, and pickles.
Are nitrites and nitrates in cured meat a halal question?
The preservatives themselves are mineral salts and raise no source question. Sodium nitrite, E250, and its relatives are manufactured chemically. On a cured meat product the question is the meat, not the curing salt: whether the animal was permitted and slaughtered according to Islamic requirements. The preservative is the least important line on a bacon label.
What is lysozyme and why does it matter?
Lysozyme, E1105, is an enzyme extracted from hen egg white. It is used to prevent late blowing in hard cheeses such as some Dutch and Italian styles, and it is used in winemaking. Egg is halal, so this is usually not a problem, but it is genuinely animal derived, which makes it the exception in a category that is otherwise synthetic and mineral.
Is natamycin halal?
Natamycin, E235, is produced by fermenting a Streptomyces bacterium, so it is not animal derived. It is used as a surface mould inhibitor on cheese and cured sausage. As with any fermentation product, a strict standard may ask about the nutrients in the growth medium, which is the same structural question that applies to MSG and citric acid.
Do preservatives ever hide an alcohol carrier?
Rarely as preservatives themselves, but some liquid preservative and antioxidant preparations are supplied dissolved in a carrier, and rosemary extract used as a natural antioxidant is often an oil or solvent extract. If a label lists a natural antioxidant or extract rather than a numbered preservative, the carrier is a fair question.
