Casein is unusual among dairy ingredients because the label often names the process, not just the substance. That single word does most of the checking for you.
Quick answer: read the word before casein
Casein makes up roughly four fifths of the protein in cow milk. To isolate it, a manufacturer has to make it come out of solution, and there are three industrial ways to do that.
- Acid casein: acid is added to skim milk until the casein precipitates. Hydrochloric acid or lactic acid is used. No enzyme involved.
- Rennet casein: rennet is added, exactly as in cheesemaking, and the casein sets into a curd. The coagulant source question applies.
- Micellar casein: milk is passed through filtration membranes that physically separate casein from whey. No acid or enzyme needed.
Because these produce proteins with different melting and binding behaviour, manufacturers name the type on ingredient lists more often than not. That makes casein easier to check than many dairy derivatives.
Rennet casein is the one that needs work
When a label says rennet casein, the same three coagulant possibilities apply as for cheese: animal rennet from calf stomach, microbial coagulant from fungi, or fermentation-produced chymosin made by a microorganism carrying the calf gene.
Fermentation-produced chymosin dominates industrial dairy in many countries, so a large share of rennet casein is made without animal tissue. But the ingredient name alone does not say which, and rennet casein is not usually accompanied by a coagulant statement. Knowing the typical use helps you predict which form you are dealing with before you find the word.

Casein, whey, and milk protein
