E472 appears on bread, cakes, biscuits, margarine, and packaged desserts, usually written as an emulsifier with a letter after it. The letter tells you which organic acid was used. It does not tell you where the fat came from, and that is the part the halal question turns on.
What E472 actually is
Start with glycerol and fatty acids joined together, which is the family covered by E471. E472 goes one step further and attaches an organic acid to that structure. The result is an emulsifier that holds fat and water together and, in bread, strengthens dough so the loaf keeps its shape.
The European Food Safety Authority lists these additives under food additives, and the FDA regulates the equivalent substances in its food additive and GRAS inventories. Both describe what the substance is and how it may be used. Neither requires the label to name the origin of the fatty acid.
The letters, and why they do not change the answer
- E472a: acetic acid esters, used in coatings and processed meats.
- E472b: lactic acid esters, common in whipped and aerated products.
- E472c: citric acid esters, used in margarine and fat spreads.
- E472d: tartaric acid esters.
- E472e: mono- and diacetyl tartaric acid esters, known as DATEM, very common in commercial bread.
- E472f: a mixed tartaric and acetic acid ester.
Every one of those organic acids is produced without animal material in normal commercial practice. The variable is the fatty acid. It can be pressed from palm, soy, sunflower, rapeseed, or another vegetable oil, or it can be rendered from animal fat. Both routes are ordinary in the industry, and the finished additive looks the same on the label either way.

Where you will meet it
DATEM in particular is a workhorse of industrial baking, so E472e turns up in sandwich loaves, burger buns, wraps, and pastry. The other variants appear in margarine, coffee whiteners, cake mixes, ice cream, and chocolate coatings. If a product has a soft crumb or a stable foam that survives a long shelf life, an emulsifier of this family is a reasonable thing to look for.
How to check it
- Find the emulsifier in the ingredient list and note the exact code, including the letter.
- Look for a halal mark and confirm with the certifier that it covers this product and this market.
- If there is no certificate, ask the manufacturer for the fatty acid source in writing.
- Treat a vegan or plant-based claim as a useful clue about the source, not as certification.
- Remember that a brand can use one supplier in one country and a different one elsewhere, so check the packaging you actually hold.
