Gum arabic is one of the more reassuring things to find in an ingredient list. It is hardened sap, tapped from acacia trees and dried, and it has been traded for a very long time. The plant origin is not in question. What is worth a second look is the job it is doing in the product.
Where it comes from
The gum is an exudate. When the bark of an acacia tree is cut or damaged, the tree seals the wound with a sticky sap that hardens into nodules. Those nodules are collected, cleaned, and milled. The main commercial species are Acacia senegal and Acacia seyal, grown across a belt of sub-Saharan Africa, with Sudan historically the largest producer.
No animal material is involved in producing the gum itself. That is why it appears on the low risk side of certifier ingredient matrices, and why it is a common substitute in products reformulated away from animal-derived stabilisers.
The real question: what is it carrying?
Gum arabic dissolves readily and holds oils in suspension, which makes it an excellent carrier. In a soft drink it stops citrus flavour oils separating out. In a spray-dried flavour powder it forms the shell around the flavour compound. In confectionery it can be part of the polish on a hard-shelled sweet.
