How it is built
Start with sorbitol, a sugar alcohol usually made from glucose. Dehydrate it to sorbitan. React that with ethylene oxide to attach polyoxyethylene chains, which is what makes the finished emulsifier water loving. Finally, attach a fatty acid.
The first three steps involve no animal material in normal commercial practice. The fatty acid is the variable, and it is also what the number after the name refers to.
