Agar is one of the few entries on an ingredient list that you can read and move straight past. It is worth knowing why, and worth knowing the one name it hides behind.
Quick answer: boiled seaweed, dried
Agar is a carbohydrate found in the cell walls of certain red algae, principally Gelidium and Gracilaria species. Production is close to a kitchen process scaled up: the seaweed is washed, boiled in water to dissolve the agar out, filtered, then set into a gel and dried, historically by freezing and thawing to drive out the water.
There is no animal input, no fermentation medium to ask about, and no solvent precipitation step of the kind used for pectin and carrageenan. That makes agar unusually clean from a checking point of view.
The name that causes confusion
Agar is frequently sold and labelled as vegetable gelatin or gelatin substitute. Those phrases contain the word gelatin and mean the opposite of it.

Vegetable gelatin is a category description for a plant gelling agent, almost always agar. If a label uses that phrase, look for the specific ingredient named alongside it, and treat the phrase itself as a prompt rather than an answer.
Agar sets firm and brittle and holds its shape at room temperature. Gelatin sets soft and melts near body temperature. A jelly that stays solid in a warm room is usually not gelatin.

Where agar appears
Asian desserts and jellies, where it is often called kanten, are the traditional use, along with grass jelly, agar puddings, and mooncake fillings. Beyond that it turns up in vegetarian and vegan jelly sweets, plant-based desserts and panna cotta alternatives, some glazes and bakery fillings, canned and processed products as a stabilizer, and non-food uses such as laboratory growth media.

What still needs checking
The agar does not. The product around it might. An agar jelly dessert or powdered jelly mix typically adds sugar, acid, flavors, and colors, and a red or pink shade should be checked for carmine or E120.
