Is annatto halal?

Annatto is the colour manufacturers reach for when they want orange without using an insect. It is the easy half of the colour question.

Short answer: Annatto is plant derived and widely accepted as halal. It comes from the seed coat of the achiote tree and produces the yellow and orange shades in cheddar, butter, snacks, and smoked fish. Quick answer: it comes from a seed

Annatto is extracted from the waxy red coating on the seeds of Bixa orellana, the achiote tree, native to tropical South and Central America. The seeds have been used as a colouring and condiment for centuries, and the pigment is still produced by extracting that seed coat.

Two pigment fractions come out of it. Bixin is oil soluble and gives orange shades. Norbixin is the water-soluble form, produced by treating the extract with an alkali. Both appear under E160b.

Annatto is the plant answer to carmine.

When a manufacturer wants warm colour without using an insect-derived pigment, annatto and paprika extract are the usual choices. Finding annatto on a label often means carmine was deliberately avoided.

The carrier, which is the only real question

Pure annatto pigment is not something a factory can dose into a vat, so it arrives as a prepared solution or dispersion. What it is dissolved in varies by application.

  • Alkali solution: potassium or sodium hydroxide converts bixin to water-soluble norbixin for aqueous products.
