Quick answer: it is cooked sugar
Caramel color is made by heating a carbohydrate until it browns, in a controlled industrial process that produces a concentrated, stable coloring rather than a sweet. The starting materials are food carbohydrates: glucose syrup, sucrose, invert sugar, molasses, or starch hydrolysates. All are plant-derived.
A reactant is usually added to steer the reaction and give the finished color the right electrical charge for its application, so it does not precipitate out of a cola or a sauce. Which reactant is used is what separates the four classes.
The four classes
- E150a, plain caramel: made with heat alone, or with acids or alkalis. The simplest class.
- E150b, caustic sulphite caramel: made with sulphite compounds. Common in spirits and some sauces.
- E150c, ammonia caramel: made with ammonium compounds. Common in beer, sauces, and baked goods.
- E150d, sulphite ammonia caramel: made with both. The class typically used in cola drinks.

The one feedstock question
The carbohydrate used to make caramel color is normally corn glucose syrup or cane sugar. In some regions and applications, malt-derived carbohydrate has been used, and malt is associated with brewing.
This is worth understanding accurately rather than overstating. Malt itself is sprouted grain, not an alcoholic drink, and using malt syrup as a sugar source does not put alcohol into the caramel color. A stricter standard may still prefer to confirm the feedstock, and a manufacturer can state it. In practice this is a rare question rather than a common finding.
Separately, caramel color is heavily used in beer, whisky, and other alcoholic drinks to standardize their appearance. That tells you nothing about the additive. It is the same coloring being added to a product that is itself the issue.
